Rice & Clams Recipe
1⁄4 cup (1/2 stick) butter
1 small onion, finely chopped
1 stalk celery, “ “
1 cup raw rice (long grain)
2 cups Chicken Broth
1⁄2 cup grated Parmesan Cheese 2/3 cup ripe olives, chopped
7 oz. can minced clams w/liquid
Place all ingredients in a slow cooker. Stir well. Cover and cook on high for one hour.
Then on low 4 to 6 hours.
I doubled it for the pot-luck meeting, and I used broccoli instead of clams.
